''Refined, classy and complex characters on show here, which meld beautifully with the ripe peachy fruit notes. Very fine, expressive, distinctive ready to drink now but will age very well for many years.” 92 Points, Decanter Magazine
The 2019 vintage in Chablis had all the hallmarks of an outstanding year. Small yields of ripe fruit with excellent acidities have produced wines both generous and racy, with fleshy textures hemmed by vibrant, citrussy acidity and chalky mineral backbone. From one of the region’s very few certified organic producers, the 2019s are very ‘White Burgundy’ yet still shot through with archetypal cool, mouth-watering freshness.
“Domaine Bernard Defaix is a highly-rated family estate based in Milly, with the vines for this bottling averaging 30 years age. Ten months lees ageing adds to the complexity on both the nose and palate. Refined, classy and complex characters on show here, which meld beautifully with the ripe peachy fruit notes. A very fine, expressive, distinctive Chablis which is ready to drink now but will age very well for many years.” 92 Points, Decanter Magazine
Defaix's Chablis is drawn from a mosaic of organically tended parcels of mature vines, situated around Milly and Poinchy in the heart of Chablis. The wine is fermented wild and aged on fine lees in glass-lined tanks. Off the bat, this opens with great energy and intensity of ripe citrus and creamy lees aromatics, leading to a super juicy, mouth-watering palate of real weight with lemon pith and crunchy white peach fruit, as well as chalky, racy, mineral freshness. Terrific vitality and clarity from start to finish, with a salty, rocky, powdery close.
"Chablis fans should add the Defaix brothers to their short list of rising star."Allen Meadows, Burghound
"A discreet application of wood sets off aromas of smoked apple, lemon and tidal pool. Here too there is fine richness to the full-bodied and concentrated flavors that coat the mouth on the very dry if slightly warm finish where hints of citrus rind add a sense of lift." Allen Meadows, Burghound,
